7 Ingredients
– 300g (2 cups) plain flour
– 2 tsp baking powder
– 80g unsalted butter, chilled, finely chopped, plus 60g extra
– 185ml (3/4 cup) milk
– 3 garlic cloves, crushed
– 1/3 cup chopped fresh basil, plus extra leaves, to serve
– 80g mozzarella, cut into 8 pieces
5 Method / Steps
Step 1
Place the flour and baking powder in a large bowl. Add the chopped butter and use your fingertips to rub the butter into the flour mixture until the mixture resembles coarse crumbs.
Step 2
Make a well in the centre of the flour mixture and add the milk. Use a flat-bladed knife to stir the dough until it just comes together. Turn dough onto a lightly floured surface. Knead briefly until mixture is smooth. Divide into 8 portions.
Step 3
Place the garlic and extra butter in a microwave-safe bowl. Microwave on high for 1 minute or until melted. Stir through the chopped basil.
Step 4
Shape a piece of dough into an approximate 8cm disc. Dip a piece of mozzarella in the butter mixture and place in the centre of the dough disc. Bring the edges up to enclose and press edges to seal. Roll into a ball (the butter will ooze out and coat the bread ball). Continue with the remaining pieces of bread and mozzarella.
Step 5
Place four of the bread bombs, seam side down, in the pie maker. Cook for 6 minutes. Brush with some remaining butter mixture and turn over. Cook for a further 6 minutes. Transfer to a plate and cover with foil to keep warm. Cook the remaining bread bombs. Serve scattered with extra basil leaves.
