Cottage Pie

Preparation time – less than 30 mins

Cooking time – 1 to 2 hours

Serves – Serves 6

Each serving provides 722 kcal, 28g protein, 37g carbohydrate (of which 6g sugars), 48g fat (of which 23g saturates), 5g fiber, and 1.3g salt.

Ingredients

For the cottage pie filling

50ml/2fl oz olive oil
1 large onion or 3–4 banana shallots, finely chopped
650g/1lb 7oz beef mince
2 tbsp tomato purée
1 tbsp plain flour
150ml/5fl oz red wine
4 sprigs of fresh thyme, leaves only
400ml/14fl oz beef stock
Worcestershire sauce, to taste
salt and freshly ground black pepper

For the mash

900g/2lb King Edward potatoes, peeled and chopped
115g/4oz butter
125ml/4½fl oz milk

To serve

150g/5½oz frozen peas
50g/1¾oz butter

Method

Heat half the oil in a large heavy-based pan. Add the onion and cook until softened. Tip it onto a plate.
Return the pan to the heat and add the remaining oil. When it’s hot, fry the mince, in batches if needed, for 4–5 minutes, or until browned all over. Stir in the cooked onion and tomato purée and cook for 1 minute. Stir in the flour and cook for a further minute. Pour in the red wine, scraping up any caramelised bits with a wooden spoon, and add the thyme.
Add the stock and simmer for 45 minutes, or until the mince is tender and the mixture has thickened. Season to taste, and add a few dashes of Worcestershire sauce. Keep warm over a very low heat. Preheat the grill to high.
Meanwhile, for the mash, put the potatoes in a pan of salted water and bring to the boil. Reduce the heat and simmer for 12–15 minutes, or until they are tender. Drain and return the potatoes to the pan, then place over the heat for about 1 minute to drive off any excess moisture. Mash well, then add the butter and milk, beating to form a smooth mash. Season to taste.
Put the cottage pie filling in a baking dish and spoon the mash over the top. Grill for 8–10 minutes, or until golden brown.
Meanwhile, boil the peas in boiling water in a small saucepan for 3–4 minutes, then drain and add the butter. Serve the cottage pie with the peas.

Recipe Tips

To stop the mash leaking into the cottage pie filling below (and if you have time), let the meat cool before adding the potato topping. You can freeze the cottage pie filling for up to 3 months.

Serves-Makes 20 brownies

Dietary- Vegetarian

Ingredients

225g/8oz butter (preferably unsalted)
450g/1lb caster sugar
140g/5oz dark chocolate, broken into pieces
5 free-range medium eggs
110g/4oz plain flour
55g/2oz cocoa powder

Method

Heat the oven to 190C/170C Fan/Gas 5. Line a 20x30cm/8x12in baking tin with baking paper.
Gently melt the butter and the sugar together in a large pan. Once melted, take off the heat and add the chocolate. Stir until melted.
Beat in the eggs, then stir in the flour and the cocoa powder.
Pour the brownie batter into the prepared tin and bake for 30–35 minutes, or until the top of the brownie is just firm but there is still a gentle wobble in the middle.
Take out of the oven and leave to cool in the tin. Cut the brownies into 5cm/2in squares when only just warm, or completely cool.

Recipe Tips

The secret to making the best, fudgy, squidgy brownie is not to overbake them. They should wobble in the center when you take them out. The residual heat will continue to cook them for a few minutes and they’ll set up on cooling. Too firm and they will be more cakey than fudgy.

You can easily make these brownies gluten-free by swapping in gluten-free flour. If you’d like to jazz them up with nuts, chocolate chips, or both, add these after the addition of the eggs, when the batter is somewhat cooler and will not melt the chocolate straight away.

Ingredients

1 head cauliflower, broken into large florets
40g/1½oz butter
40g/1½oz plain flour
400ml/14fl oz milk
1 tsp English mustard
100g/3½oz mature cheddar, grated
salt and freshly ground black pepper

Method

Preheat the oven to 190C/170C Fan/Gas 5.
Wash the cauliflower thoroughly and place in a large saucepan of salted water. Bring to the boil and cook for 3–5 minutes, until the cauliflower is almost tender, but still fairly firm. Tip into a colander and leave to drain.
To make the sauce, melt the butter in a heavy-based saucepan and stir in the flour. Cook over gentle heat for 1 minute. Remove the pan from the heat and gradually add the milk, a little at a time, stirring well between each addition. Return the pan to medium heat and bring the mixture to a boil, stirring constantly. Simmer for 2 minutes, then remove from the heat. Stir in the mustard and two-thirds of the cheese and set aside.
Arrange the cauliflower in an ovenproof baking dish. Carefully pour over the sauce, ensuring the cauliflower is completely covered. Scatter over the remaining cheese and bake for 25–30 minutes, until the top is golden brown and bubbling.

J’Something has never been shy to let the world know how he feels about his wife. He noted that the more time he spends with Cordelia (his wife) the more he has realized that “heaven truly is a place on earth!”

“Trying to make the most of every second in every day … not easy but sheesh living one day at a time has been THE most valuable lesson I’ve learnt so far on my journey. Married my best friend never sounded so true,” gushed the singer.

Crossing over into the new year on December 31 2022, J’Something expressed thanks for his wife and the gift of life. He also encouraged his fans to be grateful for the small things in life.

Learnt another lesson this year. Unlike the others, this lesson really changed my inner being. Our society tends to be one of opposites … right or wrong, good or bad, black or white … where one side often tends to be perceived as superior to the other. I have been exposed to my share of life and the greatest lesson I learnt this year was that “God has no opposites.” I read this in a book called The 40 Rules Of Love by Elif Shafak and it completely rocked my boat. I highly recommend you get this novel.

Big Brother Mzansi season 3 winner Mpho Wabadimo makes a return to our television screens with a brand new show called idlozi Livumile.

“I’m back on your screens,” announced Mpho Wabadimo. “A new and exciting show is coming to your screens soon called PRIDE OF AFRICA. I can’t wait for this one you don’t want to miss it! idlozi livumile.”

Apart from what Mpho Wabadimo posted on her timeline, not much is known about the new show.

Mpho and her ex Themba Broly made headlines last month after announcing that they had broken up.

Mpho told her fans that she was moving out of her apartment as she was single.

“And secondly, I’m single again! So this place has become a keeper of memories I want to leave behind… I’m moving to a new place, and I’m moving closer to the East Rand because also, uhm, I went to the doctor the other day and they found out that I have a bit of a complication with my pregnancy and that has been a fluke. So I need to be as close to home so that if anything happens to me I have somebody to assist me.”

Not all has been lost for Mpho Wabadimo this year. At the beginning of this year, she became the second covergirl for the newly re-established magazine Bona.

She graced the cover alone but it was not the initial plan. In an episode of My Inked World, it was revealed what was going on behind the scenes. From the latest episode, we learned that Mpho was not meant to do the cover alone. She was supposed to do the cover with Themba Brolly who stood her up.

In another episode of My Inked World, we got to see Themba as a brother and the breadwinner of his family. A fact that tugged at the heartstrings of a number of viewers. This is as it was revealed that through his fame and subsequent “wealth,” Themba has become the breadwinner of his family.

A family which consists of 14 relatives including his siblings, and the addition of his two children and one on the way. As such, fans seemed to understand why Themba could sometimes not be present for Mpho as he was chasing money in order to support all of the aforementioned family members.

SABC Video Entertainment is proud to introduce the Metro FM Music Awards pop-up channel, to start broadcasting from the 29th of April to the 28th of May 2023 on the SABC Plus App.

As a build-up to the prestigious awards, the Metro FM Pop-Up channel will launch with the platform taking viewers down memory lane with previous Metro FM Music Awards special moments showcasing highlights from SABC1’s Selimathunzi, The Get-Together Music Special, Live Amp, and The Real Goboza Show.

The Pop-Up Channel will stream live the Metro FM Music Awards Pre-party on the 5th of May 2023, and the After Party taking place on Saturday from 6 pm to 10 pm. The Metro FM Music Awards Black carpet and Main Awards ceremony will be broadcast live on SABC1 from 8 pm, with a simulcast on the Metro FM Pop-Up channel launching on SABC Plus on the 6th of May 2023.

The Metro FM Awards were announced recently. Lerato Kganyago and Katlego Maboe will host the awards.

The music awards will take place in Mbombela on Saturday 06 May. After a protracted legal process, Katlego was absolved in January 2022. He returned to The Expresso Morning Show on Monday, 8 August 2022.

Speaking to TshisaLIVE, he said this is probably one of the biggest gigs he has bagged in his career.

“Music is quite a big part of my life, it’s through music that I found myself on television and entertainment at large. This is probably one of the biggest gigs I have bagged in my career. I am absolutely honoured and very excited, this is a huge gig,” he told TshisaLIVE.

“I have been doing this for quite some time and it’s something I believe is part of my DNA of who I am. Every single award show you present or any show, you approach with reverence.”

Maboe said he is grateful for the major comeback and the opportunities he has received so far.

“I don’t take for granted the opportunities that have in recent times come knocking at my door through the support of people who’ve just stood by me, prayed for me, and helped me through the toughest times that these opportunities have come around.

“I’m so grateful that I still have an opportunity to be part of what I believe is an incredible industry.”

Off the back of his Best Global Music Performance nod at the 65th edition of the Grammy Awards; Zakes Bantwini joined forces with Glenmorangie for the next installment of the Glenmorangie Experience.

The alcohol brand hosted its third event at Konka Day Club in Soweto on Sunday 19 March 2023 where Bantwini will perform alongside a stellar line-up of local acts. The experience is a multi-sensory event, with the fusion of visuals, sound, and delicious drinks.

Thousands of attendees gathered at the country’s trendiest lifestyle spots last year and this coming edition promises to transform Soweto into a wonderland of experiences. “I am proud and excited to continue working on these groundbreaking events with Glenmorangie,” Bantwini says. “If you haven’t been to the Glenmorangie Experience, I encourage you to come on down and enjoy a night you won’t forget”.

During their acceptance speeches, Wouter thanked the Grammy’s for the huge nod and said it was a beautiful moment.

“Thank you so much. This is such a beautiful moment on the road to sharing South African music and culture with the world,” he said.

Zakes Bantwini also took the mic and said, “I just want to say, we are coming from Africa, South Africa. And this moment right here to anybody who’s in Africa just proves and affirms that every dream is valid.”

Nomcebo Zikode sang a snippet of her massive hit Jerusalema and went on to thank the people involved in the success of Bayethe.

Gugu Khathi reacts to rumors of having an affair with Tebogo Lerole of Kwela Tebza band.

Gender activist Sli Khumalo narrated the cheating saga between the two to ZiMoja; she also gave the publication chats and voice recordings from the alleged infidels.

Speaking to the ZiMoja, the couple claimed to be very strong, and the allegations are false.

“I don’t know this Sli, I only know her from this SUV challenge. She works with Tebogo and them,” Khathi said.

The DJ’s wife said Sli has been problematic/.

“First there was a shortage of rooms and we suggested that people must share. I was also sharing with my friend TK, she had issues with that.”

Gugu says she has known Tebogo since she was 14 when she first came into the industry.

“Why would I want to sleep with Tebogo now when I have known him for years? This girl needs help, she is sick in her mind,” Gugu says.

“I am happy in my marriage and there is nothing that can break us, not even her stupid allegations, she is the sick one who needs help.”

“if Sli wants to fight, she must send her address. Cassper…I am ready to fight this girl in the ring professionally, or even on the streets. I am not scared of her.”

DJ Tira also slammed the rumor, saying he trusts his wife.
