Brentford’s Yoane Wissa stunned the hosts by scoring the quickest top-flight goal of the season, heading into an open net just 23 seconds in. The goal came after a rare mix-up between John Stones and Ederson, who failed to clear Keane Lewis-Potter’s header.

City’s response was swift and decisive. Haaland, who was playing despite the recent loss of a close family friend, leveled the score by tapping in a loose ball after Kevin de Bruyne was tackled inside the Brentford penalty area.

The Norwegian forward struck again before the break, muscling past Ethan Pinnock to connect with a long ball from Ederson. This put him tantalizingly close to becoming only the fifth player in English top-flight history—and the first since 1946—to score three consecutive hat-tricks.

Although you can use mayonnaise, yoghurt or sour cream as your potato salad dressing (or any combo) we can’t look past good ol’ mayo. We’ve added a bit of vinegar too, to give it a bit of acidity.

Ingredients (8)

– 600g nicola potatoes, unpeeled
– 2 middle bacon rashers, rind removed, chopped
– 1 medium brown onion, finely chopped
– 2 hard-boiled eggs, chopped
– 1/2 cup whole-egg mayonnaise
– 1 tbsp Coles organic apple cider vinegar
– 2 gherkins, finely chopped
– 3 green shallot, thinly sliced

Method

Step 1

Cook potatoes in a large saucepan of boiling, salted water for 15 minutes or until tender. Drain. Cool. Peel and chop.

Step 2

Meanwhile, heat a large nonstick frying pan over high heat. Add bacon and brown onion. Cook for 2 to 3 minutes or until brown onion has softened. Transfer to a large bowl. Add potato and egg. Combine mayonnaise and vinegar in a bowl. Add to potato mixture. Season with salt and pepper. Toss to combine.

Step 3

Serve topped with gherkins and green shallot. Serve.

How to hard-boil eggs for potato salad

If you’re going to make potato salad, you’re going to need to hard-boil eggs. It’s a classic ingredient, after all, especially in our best potato salad. Place in a saucepan or large pot. Cover potatoes with cold water. Cover pan. Bring to the boil over a high heat. Reduce heat to medium and simmer for 7 minutes. Place under cold water for 1 minute. Set aside to cool before peeling.

What’s in a potato salad?

Though potato salad recipes vary, the one ingredient that you’ll always find in a potato salad is boiled potatoes (skin on or off). Although our best potato salad recipe features bacon, onion, egg and gherkins (or dill pickles), others contain chives, celery, capers or herbs. Some even use orange juice instead. If you don’t have green onions or spring onions, you could try adding red onion to your potato salad recipe.
