Start your morning the right way with this insanely delicious crustless bacon quiche with mushrooms and spinach. This crustless quiche recipe is so rich and creamy that you will not even miss the flaky crust. In fact, this quiche may easily become your next favourite meal to prepare for breakfast, lunch or dinner.

This tasty crustless bacon quiche is packed with protein, not to even mention all the healthy nutrients of the added mushrooms and spinach. Quiche is also very filling, so whether you prefer a generous helping in the morning, afternoon or evening, it will give you the necessary petrol in your tank until the next meal.

The best part is that crustless bacon quiche with mushrooms and spinach can be prepared ahead of time. So, if you are planning for a busy week ahead, you can quickly whip this tasty dish together and freeze it for up to a month. Before placing the quiche into the freezer, allow it to cool to room temperature and cover it with cling wrap and aluminum foil. When you want to use it, remove the cling wrap, and cover lightly with foil on top. Pop into a preheated oven of 180°C for about 20 minutes, or until warmed thoroughly. It will be just as delicious as the day you prepared it.

1 onion, finely chopped

1 clove of garlic, finely chopped

250 g diced bacon

400 g mushrooms, finely chopped

5 extra large eggs

250 ml cream (optional)

250 ml self-raising flour

salt and pepper to taste

1 – 2 ml cayenne pepper

500 g fresh spinach leaves

1½ cup grated cheddar cheese


Preheat the oven to 180°C / 356°F.
Lightly grease an oven dish. If using aluminum foil trays for freezing, spray lightly with Spray and Cook.
Pan fry the onion, garlic and bacon together. Add the mushrooms and pan fry. Set aside.
Mix these eggs, cream, self-raising flour, salt, pepper, cayenne pepper and 1 cup grated cheddar cheese together, set aside.
Cut spinach leaves finely, hard pieces removed.
Mix the bacon mixture and egg mixture with the spinach leaves. Place in an ovenproof pie dish or dishes.
Sprinkle ½ cup grated cheese and paprika over the quiche.
